Plant-Based Spicy Loaded Nachos

We're taking on a beloved classic - nachos - but with a plant-based twist. These spicy loaded nachos are perfect for those who want all the flavor and none of the animals involved.

The secret to these nachos is in the cheese sauce. Instead of traditional cheese, we're using GrownAs Foods Vegan Cheese Powder, mixed with a little bit of vegan butter or oil and plant-based milk. The result is a creamy and flavorful sauce that's perfect for drizzling over your chips.

But we're not stopping there. We're kicking up the heat with some Everything But The Taco Hot Sauce, a serrano pepper, and plant-based chorizo crumbles. And of course, we can't forget the cilantro, because what's a nacho without some fresh herbs?

These nachos are fully customizable, so feel free to add whatever toppings you like. The beauty of loaded nachos is that there are no rules! Just make sure to enjoy them warm, while the cheese is gooey and delicious.

What you need:

Cheese Sauce

Nacho Toppings

  • 1-2 Tbsp Everything But The Taco Hot Sauce
  • 1 serrano pepper
  • 1/2 cup of plant-based chorizo crumbles (we used MorningStar)
  • Handful of fresh chopped cilantro
  • Whatever else sounds good to you! That's the beauty of loaded nachos.

Directions:

  1. Start by cooking the chorizo according to package instructions.
  2. Meanwhile, prep the cheese sauce. Melt butter or heat oil in a small saucepan over Med-Low heat. Mix the cheese powder in until fully combined. Add the milk and stir until smooth. It should be thick, but you can add more milk if you prefer it thin.
  3. When the chorizo and cheese is ready, pour over your plate of chips. Add your chosen toppings. Dig in right away!
