Slow Cooker Vegan Stuffed Peppers, with some Italian flair! A very low-effort dish with delicious end result, thanks to Cheddar Craving Vegan Cheese and Umami Reserve Hot Sauce.
Simply fill 4 large red bell peppers with:
- 1 small yellow onion, diced
- 1/2 cup lentils
- 1/2 cup uncooked quinoa
- 2 tsp italian seasoning
- 2 cloves garlic
- 1 cup vegetable broth
- 1 can fire-roasted diced tomatoes
- 1/2 cup chopped sun-dried tomatoes
- 3 Tbsp Cheddar Craving Vegan Cheese
Some optional finishing touches:
- Douse with Umami Reserve Hot Sauce for an extra spicy, savory touch
- Chopped fresh basil for garnish
