Slow Cooker Vegan Stuffed Peppers

Slow Cooker Vegan Stuffed Peppers, with some Italian flair! A very low-effort dish with delicious end result, thanks to Cheddar Craving Vegan Cheese and Umami Reserve Hot Sauce



Simply fill 4 large red bell peppers with:

  • 1 small yellow onion, diced
  • 1/2 cup lentils
  • 1/2 cup uncooked quinoa
  • 2 tsp italian seasoning
  • 2 cloves garlic
  • 1 cup vegetable broth
  • 1 can fire-roasted diced tomatoes
  • 1/2 cup chopped sun-dried tomatoes
  • 3 Tbsp Cheddar Craving Vegan Cheese
Cook the stuffed peppers in slow cooker on high for 3 hours.

Some optional finishing touches:
  • Douse with Umami Reserve Hot Sauce for an extra spicy, savory touch
  • Chopped fresh basil for garnish
  • Miyoko’s Vegan Mozzarella
